Organics extended at National Starch

UK starch ingredient company National Starch, a subsidiary of chemical giant ICI, this week announced the launch of Novation 9330 and Novation 9360 - a range of organic, functional native starches.

The company maintains that these new starches offer improved functionality and process stability over traditional native starches. Novation 9330 and Novation 9360 both develop smooth, short-textured pastes and, at high concentrations, they set to a soft gel with good organoleptic characteristics. Novation 9330 is designed for high temperature/high shear conditions, while Novation 9360 is, claims National Starch, easier to cook and suitable for milder processing conditions.

Refined from tapioca, the starches are suitable for use in highly processed applications including dairy, baby food, fruit preparations, soups, sauces and emulsified dressings. They comply with Council Regulation 2092/91 and are compatible with 'organic' labelling.

National Starch recommends that Novation 9330 and 9360 be evaluated in each specific application because factors such as heating rate, solids content, shear/stress conditions, pH and the presence of other ingredients such as sugar and fats will affect gelatinisation behaviour and consequently rheological and textural properties.
