The consumer desire to reduce salt intake, combined with increasing criticism of the food industry with regards to the generous use of salt in processed foods, is leading ingredients companies to develop low salt alternatives.

This week UK company S. Black announced that it has come up with an ingredient that it claims will meet the requirements of manufacturers for low salt claims.

The product Mycoscent is derived from mycoprotein and is classified as a flavouring preparation. According to S.Black, the ingredient has the ability to impart a salty taste without adding sodium, and as such it can partially replace salt in reduced sodium applications.

In addition, the company claims that the ingredient will allow for a 50 per cent sodium reduction in biscuits and snack foods and a 25 per cent sodium reduction in savoury dishes.
