Danish company Novozymes has launched a new competitively priced glucose oxidase for the bakery industry, the industrial enzyme specialists announced on Monday.
Glucose oxidases are widely used for dough strengthening in combination with chemical dough oxidants such as ascorbic acid, ADA and bromate, and other baking enzymes such as xylanases and amylases.
Novozymes claims that its new product - Gluzyme Mono 10000 BG - provides the same dough strengthening effect as other pure baking oxidase products on the market.
In addition, the company said in a statement that the product is priced 'to provide savings for bakeries and bread improvers when compared to existing oxidase enzymes on the market'.
