Gourmet fruit range targets artisan chocolatiers and bakers
The global concentrated fruit ingredients specialist will launch the new range at the ISM trade show in Cologne in January.
Made up of six fruit varieties – strawberry, blueberry, raspberry, orchard fruit, orange and honey - the pieces are suitable for use in chocolates, cakes, biscuits, cookies, muffins, breads and brioche.
The all-natural range has been formatted and packed in smaller sizes to suit the needs of artisan producers.
Marc Cautaerts, general manager EMEA at Taura, said: “The bespoke solutions we create for most of our larger customers are not appropriate for artisan chocolate and bakery producers, so we have created the Gourmet Series as an off-the-peg offer to meet their specific needs.”
“It means all the benefits of our unique and high quality URC [Ultra Rapid Concentration] fruit ingredients – as well as our technical know-how – are now available for the first time in the craft chocolate and bakery market,” Cautaerts added.
Real taste, good shelf-life
The fruit pieces have been made using the company’s Ultra Rapid Concentration (URC) technology to enable “all the taste of fresh fruit, but without the mess and perishability”, the ingredients firm said.
“With a long shelf-life at room temperature, Gourmet Series ingredients can help craft bakers, chocolatiers and chefs eliminate the high levels of waste often associated with fresh fruit, thereby controlling costs,” it said.
They pieces won’t burn or bleed during baking, it said, and in high moisture applications like breads and cakes, they absorb the moisture to become soft.
Cautaerts said the range is more convenient than fresh fruit and has significant taste and texture benefits over dried and candied fruit.
