The vast majority of food manufacturers are open to a dialogue on how to get more from their ingredient supply chain, according to president of DSM Food Specialties Hans Christian Ambjerg.

Ambjerg told FoodNavigator that increased interest in sustainability issues in recent years has led food makers to question all parts of their supply chain - not just the major ingredients in their products, but also how to get the most from what were once waste and side streams.

Upgrading waste streams from dairy, meat and grain production, for example, generates more value for manufacturers, for farmers and, ultimately, for consumers, he said.
