Galactic extends buffered vinegar-based ingredient range

Galactic has extended its clean-label range of products for extending shelf life, the company has said.

Galimax Flavor V-50, VK-50 and V-100 are powdered ingredients based on buffered vinegar and made by fermentation of sugars. They are intended for use in meat, poultry, seafood, sauces, dressings and ready-to-eat preparations, the company said.

Sales, marketing and business development director Jean-Christophe Bogaert said in a statement: “Many of our developments have demonstrated the ability of our solutions to improve the shelf life of finished products with no detrimental effect on pH and taste.”

The company said the ingredients had excellent antimicrobial properties and, in many cases, could be used to enhance flavours, making them well-suited for low-salt formulations.
