The range provides functional benefits to products such as binding, moisture absorption, and improving crumb structures and softness over shelf life.
The organic proteins, such as Organic complex 12, also offer emulsification properties and provide producers with the opportunity to make front of pack protein claims.
Growing organic market
According to Ulrick & Short, the range was developed to capitalize on the organic sector, which has seen a steady growth over the past eight years.
Today, the segment is worth over £2.3bn ($2.78bn) and accounts for over 1.5% of all food purchases in the UK, which translates to almost £45m a week, according to the Soil Association’s Organic Market 2019 report.
Growth is largely attributed to the ethical eating, sustainability and personal health trends that consumers are increasingly acting upon.
“It’s good to see that organic products continue to be ever more relevant to more people. They are making ethical choices on food and drink and other aspects of daily life such as waste, packaging and energy,” wrote Helen Browing, Group CEO of the Soil Association in the report.
“It’s the perfect time to shout about the benefits of organic – ‘Food as it should be’.”
Filling the gap
Danni Schroeter, R&D manager at Ulrick & Short said the ingredients developer has had an eye on the organic market for some time and the development of the new range has been a while in the making.
“The UK organic market is now catching up with continental European markets; there has been year on year consecutive growth in the sector, and while still nascent, it is now a sizeable sector,” said Schroeter.
However, she added there has been a lack of focus on organics in the ingredients sector.
“These new ingredients offer a range of functional and health benefits to fill that development gap.”
