Arla cuts food waste with new Klöver milk

European dairy cooperative Arla has developed a product make from filtered milk left over in the production of lactose-free products.

By upcycling this left-over milk, known as milk retentate, Arla says it is not only reducing food waste, but is able to produce a milk product at a lower price.

Branded ‘Klöver’, the product is a ‘completely new innovation’ in the milk category, the dairy cooperative claimed. “By making use of more parts from our milk production, we reduce food waste,” said category manager for milk at Arla Sweden Konrad von Otter.

Compared to Arla’s standard milk product, Klöver contains ‘a little less’ fat and protein, but an equivalent amount of calcium. Further, it has a ‘slightly longer’ shelf life, which the cooperative believes could help cut food waste in the home.

Von Otter continued: “This new Swedish milk drink has the same good taste as regular intermediate milk and fits just as well in pancakes as with meal drinks.”

Irish food company fiid are added a new meal to its plant-based ready meal offerings: Aromatic Lentil & Sweet Potato Curry.

The SKU is gluten-free, as well as being high in protein and fibre. Inspired by Thai cooking, fiid describes the dish as a ‘carefully crafted blend of subtle flavours and textures’, which it says results in a ‘deeply satisfying curry’.

The Aromatic Lentil & Sweet Potato Curry joins three others in the existing range: Hearty Chickpea Tagine, Rich Sundried Tomato & Lentil Ragu, and Smoky Black Bean Chilli.

fiid founder Shane Ryan said the new offering responded to incessant demand from consumers for curry.

“Since the beginning we’ve always set out to create classic comfort foods but without the compromise, and curries are synonymous with that warm feeling – so it was a natural fit for the range.

“Our Aromatic Lentil & Sweet Potato Curry provides that nourishing belly hug you expect from a curry with real lemongrass, ginger and lime leaf and the beautiful crunch of water chestnut. A labour of love, taking over 12 months to develop, I’m so excited to finally share our newest bowl with the world!”

fiid is available in Supervalu, Tesco, Dunnes Stores, Ocado and Wholefoods.

Symposium is bringing together two so-called superfoods – extra virgin olive oil and black garlic – to create what it describes as a ‘hyperfood’: Black Garlic Olive Oil.

The company sources its olive oil from the Greek island of Zakynthos, where it says olive oil is known for its ‘fine, fruity flavour’.

The garlic bulbs are aged in small batches and stewed in their own juices to produce a ‘definitive black garlic’ that can be matured for up to six months.

The NPD was inspired by the ‘fusion of old values with modern techniques and equipment’ on the island of Zakynthos, according to Symposium’s Dan Lentell. “I saw how they were supplementing their straight olive oil with other flavours – orange, lemon, white garlic – and even though this was years ago, something stuck in my mind. What else could be added with the olives?”

The Original Cold-Pressed Black Garlic Olive Oil retails for £10 and is available via Symposium’s Etsy site.

Meat analogue maker THIS is bringing THIS isn’t Chicken Dark Soy & Garlic pieces to customers around the UK via a listing in Waitrose.

The product is aimed at ‘stir fry lovers’ and aims to provide Brits with a ‘fast, flavoursome and high protein meal solution’ during the pandemic.

THIS isn’t Chicken Dark Soy & Garlic (RRP £3.65) is made from pea and soya beans and contains 21g of protein per 100g. Further, it is a source of iron, is low in fat and salt, and contains 28% of the recommended daily allowance of Vitamin B12.

Co-founder Andy Shovel said the latest offering can be used in a variety of ways, but is ‘aimed pretty squarely’ at stir-fry lovers. “Generally, the flavour of stir-fries comes from sauces, marinades and herbs whilst the protein is usually just the nutritional workhorse of the dish.

“We’re trying to put a stop to that with out new marinaded plant-based chicken pieces by adding a rich dark soy sauce and garlicky note to Asian-inspired dishes up and down the country, especially as more people are likely to be cooking at home.”

The plant-based offering is piped with Biscoff Spread, dipped in a ginger caramel glaze, and uses Doisy & Dam chocolate buttons for the gingerbread man’s coat.

The Doughman 6-pack is already available to order online, and a Gingerbread Doughman Do-It-Yourself Home Kit will be available for purchase as of tomorrow (17 November).
