The Dawn Balance Vegan Sponge Cake Mix is V-label certified and provides the same functionality, texture and taste experience as a regular sponge cake mix.
A sponge cake is very light, airy and, well, spongey - thanks to its high egg content (approximately 40%). Sponge cake recipes don’t contain butter or leavening agent, but rather rely on the leavening action of air whisked into the egg protein. The increase in volume is achieved by trapped air and water vapor that expand during baking.
This obviously, is the challenge when it comes to a vegan version. True vegans don’t eat animal-derived food or products with animal origins, including eggs.
Undeterred, the R&D experts at Dawn Food used the experience gained from the development of the company's successful Vegan American Mixes to create a vegan sponge cake mix with good batter structure and aeration: like any normal sponge but sans eggs.
