Diversified Technologies has introduced a Pulsed Electric Field (PEF) system for processing fruits and vegetables.

The firm said it softens tissue at the cellular level in a process called 'electroporation' which makes slicing, dicing, peeling, drying and juicing easier.

PEF processing can destroy pathogens in liquid food and wastewater.

Liquids pass through processing chambers and are "pulsed" with high voltage electric pulses generated by DTI's PowerMod electronics. The voltage, duration and frequency can be varied depending on the application.

PEF processing is a non-thermal technology and eliminates chemical or radiation treatment.

The system uses microsecond 1-5 kV/cm high voltage pulses to perforate cell membranes.

Machines start at 100 kW, packaged in a stainless steel enclosure and are priced from $295,000.
